Basil & Cucumber Mojito Recipe
Serves 1
Ingredients
Juice of 1 lime
Approx. 1 inch cucumber, halved and inner flesh scooped out
1 tsp caster sugar
Small handful fresh basil, torn
60ml white rum
Soda water or cucumber tonic water
To serve
Ice
2 tbsp caster sugar
Small handful basil leaves
1 lime wedge
Method
Make the Basil Sugar
Combine 2 tbsp caster sugar with a small handful of basil in a high-speed blender. Pour onto a plate. Run the lime wedge around the rim of your glass, then dip it upside down into the basil sugar so it clings to the edge. This little detail will wow your guests before they’ve even had a sip.Build the Drink
In your serving glass, add the lime juice, cucumber flesh, 1 tsp caster sugar, and torn basil leaves. Gently muddle everything together to release the flavours, then add two chunky ice cubes.Finish & Serve
Pour over the white rum, then top with soda or cucumber tonic water. Garnish with a few basil leaves and an extra slice of cucumber, if you like.
